Bitter is one of the most underrated flavors in the modern diet. For our ancestors this was not so: many fresh greens before modern agriculture were somewhat bitter. Historians and archaeologists have discovered recipes for bitters infused into wine, liquor or vinegar from nearly every corner of the globe.
Bitters have a drying, cooling effect on the body, while stimulating gastric fluids. Come learn in this class how this occurs and how to take advantage of the healing effects of bitters.
The first portion of this class will go over the theory on the properties of and common ailments associated with herbs in this flavor profile, while the second class will be a deep-dive on specific herbs we can use for these purposes and how to use them in a recipe.
